When we thought of people who have made an impact in Australian life, we couldn’t go past Chef and Restauranteur, Serge Dansereau. Serge gained his early career experience in the catering/hotel business in Montreal before moving to Australia to become Executive Chef at the Regent, Sydney.
As a champion of local produce and fine dining, Serge has forged a new foodie path in his adoptive Australia. He has offered “behind the scenes” experiences from the kitchen table, supported local producers and transformed modern Australian cuisine in the process. Serge has re-invented the dining experience and gained extraordinary feedback from public and critics alike, receiving many accolades and authoring several books.
In 1999 Serge established The Bathers’ Pavilion a café, fine dining restaurant and function venue at Balmoral. Bathers’ quickly became an icon of the restaurant world, revered for its commitment to serve Australians their love-for-food experience with classic beachside style.
